I either use chicken breasts or tenders.
I also cut off all the little veins and any other
'foreign matter' the butcher leaves behind.

A piece of corned beef goes on both sides of
the chicken...like a sandwich.
I use the thinnest bacon possible, cut the
strips in half, and stretch as it wraps
around the 'sandwich.'

I forgot to grease the dish and nothing bad
happened...another step you could cross out.

wrap depending on your preference.)

I double the soup and sour cream because--
OMGOSH! this stuff is yummy!!!
Served on sliced potatoes or rice.
If potatoes...I slice 1/4 thick and arrange in
backing dish, drizzle with butter, s&p, and
parsley. Bake along with the chicken--
side by side in the oven.
(baste several times to keep them moist)

This time I loaded up chicken, a pot of rice,
and broccoli as we headed down the street
to MIL's house for dinner.
Cooked my broccoli there because I
just steam for a few minutes...like it
bright green and crisp.
And talk about good leftovers...

Candy, I haven't seen you around blogland for so.. long. I am so glad that I found you again. This recipe looks wonderful. I will.. be making this very soon. I am adding you to my favorites list this time!!
Oh I've had that but never had the recipe, so thank you maam. Also I'm with you on cutting off those little pieces the butcher always leaves on, I don't know what they are but uck! Great looking casserole. Hope you have the best time in big D.
Happy Twirls
I used to make this recipe. Thanks for reminding me how good it is. Only difference is that I just shredded the beef in the bottom of the casserole dish. I like the idea of wrapping it around the chicken like the bacon.
Now that is some serious comfort food! and so... divine... or devine... or... yummy!
hugs. Dixie
Candy I love easy, and that chicken dish really looks "divine" Anything that involves bacon..well you know it is going to be good! Thanks for the recipe.
This is similar to a dish I make and everyone loves especially me because it is so fast and easy. Time for other things. Thanks for sharing.

I like easy recipes, with ingredients that are readily available in my cupboard. I would imagine this tasted as wonderful as it looks.

What a beautiful blog you have. The food, the photography and the sentiments are a feast. So glad you stopped by to see me so I could come visit. Hope you are having a good trip. Nancy
I've used this recipe twice, both times for large dinners (35-75) and it is so easy to prepare ahead of time, and people think you've gone to a lot of trouble. Plus it is absolutely delicious! It's been a few years since I've used it though, Hmmmm.... I have my granddaughter's baptism coming up, I wonder if this would be a good one to serve!? Thanks for the great reminder.
